I love to find easy quick dinners. Here is one of my families favorites.
I buy this sauce and bread at Costco.
Coconut Curry over rice and Naan. I cook about four to six chicken breasts on my George Foreman. Chop the chicken into small bite size pieces when fully cooked. Add the chicken to the heated curry sauce and dinner is ready. If I have more time I add about 2 TBSP of shredded coconut flakes, 1 TBSP of white sugar and about a 1/2 cup of chopped cashews to my sauce. If I have even more time it is yummy to boil a few potatoes. When fully cooked chop potatoes into small squares about the size of a dice. Add to curry sauce. I brush the naan with coconut oil and sprinkle garlic salt onto the naan. Broil until heated.
Enjoy Indian food from the comfort of your home with little work involved. You can cut the serving size down to fit your family and freeze the remaining sauce and bread. The sauce has a long shelf life if unopened. Usually a few months.
